Moroccan Spiced Carrots

Ingredients

500g carrots trimmed, scrubbed and halved
4 tsp olive oil
4 sprigs thyme leaves only
3 tbsp Dawson’s Honey
60 g unsalted butter

Method

  1. Preheat oven to 190 degrees.
  2. Place the carrots in a baking dish. Add the olive oil and toss to coat.
  3. Sprinkle over the thyme leaves and bake for 35 minutes or until tender.
  4. Turn the carrots occasionally while baking.
  5. Remove the carrots from the oven, and add the honey and the butter. Toss to coat.
  6. Return carrots to the oven and bake for a further 3 – 5 minutes, or until the carrots are cooked.
  7. Serve immediately. Enjoy!
