Dark Chocolate Crepes with Mandarins
Crêpes! The wonderful wafer-thin French pancakes beloved by all. While they are traditionally served with lemon and sugar we challenge you to mix it up a bit! Be adventurous and try our Dark Chocolate Crêpes with Mandarins recipe. You will be surprised at how good they taste!
Ingredients
- 2 mandarins
- 1 cup plain flour
- 1 tbsp cacao, cocoa or carob powder
- 2 tbsp caster sugar
- 2 eggs
- 2 cup milk
- 150g Loving Earth Organic Raw Dark chocolate
Method
- Finely grate rind of 1 mandarin – you will need 1 tsp. Peel both mandarins, remove white pith and divide into segments
- Sift flour and cocoa into a bowl and stir in sugar. Whisk eggs, milk and mandarin zest together in a jug. Slowly whisk into the flour mixture until smooth. Cover and stand for 30 minutes
- Meanwhile, melt the dark chocolate, set aside to cool, and then fold into cream
- On a lightly greased pan, cook the crêpes until the edges begin to set and lightly brown underneath. Turn over and cook for 30 seconds
- Serve crêpes with dark chocolate cream and mandarin segments
