Citrus Chia Pudding
Start your day with a burst of citrusy goodness with this citrus chia pudding from our friends at Deliciously Legal.
Ingredients
CHIA PUDDING
- 80 g chia seeds
- 400 ml almond milk
- 2-3 tbsp purified coconut oil or ghee
- 2-3 tsp raw sugar or maple syrup
- 1 tsp vanilla powder
- 2 tsp ground cinnanmon
- 1 pinch pink himalayan salt
CARAMELISED MANDARINS
- 60 g rice malt syrup
- 4 Imperial Mandarinspeeled and segmented
- 1 lemon zest
TO SERVE
Method
- To make the caramelised mandarins place all the ingredients into a small saucepan. Place over medium heat and cook for 10-15 minutes, stirring occasionally. Cook until mandarins are golden brown in colour. Set aside.
- To make the pudding place all ingredients into a saucepan. Place over medium-low heat. Bring to the boil, stirring occasionally. Cook for 10 minutes or until pudding becomes thick and creamy. Pour into two bowls, top with the caramelised mandarins, macadamias, marigold petals and syrup.
