Green Eggs and Ham

A spicy kick to the traditional Green Eggs and Ham as made famous by Dr Seuss.

Ingredients

1 small knob unsalted butter
1/2 tbsp olive oil
160g cooked Greenvale Slices Ham
2 large free range eggs

GREEN CHILLI & HERB SALSA

2 green chillies
a few sprigs of mixed herbs such as flat-leaf parsley, tarragon, basil, mint and dill
6 tbsp olive oil
1 tsp apple cider vinegar
1/2 a lime

Method

  1. For the salsa, deseed and finely chop the chilli and place in a bowl. Pick, finely chop and add the herbs, oil and vinegar and squeeze in the lime and mix together, then set aside.
  2. Heat the butter and oil in a frying pan over a medium heat. Once hot, add the ham slices.
  3. Immediately break the eggs over the ham and fry for three to four minutes or until the eggs are cooked to your liking
  4. Season lightly, then serve immediately with the green chilli and herb salsa drizzled on top.
  5. Enjoy!
