Zucchini Slice
Our recipe for this delicious zucchini slice is so simple and can be enjoyed for breakfast, lunch, dinner or as an on the go snack. This slice is also high in protein, low carb, grain free, vegetarian and paleo friendly (just remove the parmesan).
If you want, feel free to add some bacon to this one, we’d suggest 2 rashers, diced.
Ingredients
500 g zucchini
1 carrot grated
2 garlic cloves minced
1 tbsp lemon zest
2 eggs
1/2 cup almond meal
1/2 tsp salt
1/2 tsp pepper
1/2 bunch parsley diced
50 g Grana Padano Parmesan Cheese
50 g cheddar cheese
Method
- Preheat oven to 180 degrees.
- Grate zucchini and carrot and place in sieve. Sprinkle with salt.
- Press down firmly to remove any excess liquid.
- In a large bowl mix together all ingredients to combine.
- Spoon mixture into a medium sized baking tray and press down to spread mixture evenly throughout the tray.
- Flatten with a spoon.
- Place in the oven for 10 – 15 minutes or until golden.
- Remove from oven and set aside for 5 minutes to cool.
- Serve alongside green leafy salad.
