Whole Baked Cauliflower
From one of our all time favourite chefs Jamie Oliver, this whole baked cauliflower takes our produce of the week to a whole other level.
Unusual but flavoursome this delightful cauliflower dish is cooked in a delicious Italian-inspired sauce.
Ingredients
1 red onion peeled and sliced
5 garlic cloves peeled and chopped
1 large head of cauliflower, stalk chopped
olive oil
4 Fish 4 Ever Anchovy fillets in oil drained and sliced
1 handful flat-leaf parsley roughly chopped, stalks finely chopped
2 400g Spiral Organic Diced Tomatoes
Method
- Find a large pan that will fit the whole cauliflower head.
- Add olive oil, onion, garlic and chopped cauliflower stalk to the pan and slowly fry for 10 minutes, or until softened with a little colour.
- Add the olives, anchovies and parsley stalks and fry for another couple of minutes.
- Add tomatoes, then half-fill one of the tins with water and add that to the pan along with a good swig of red wine vinegar.
- Stir everything together and bring to the boil.
- Place your cauliflower head in to the sauce. Ideally, half of the cauliflower will be in the sauce, half above it.
- Drizzle with olive oil, cover with a lid and leave to simmer for 50 minutes.
- Serve sprinkled with fresh parsley leaves and enjoy!
