Watermelon & Goats Cheese Salad
Light and refreshing, this Watermelon salad is perfect for warm Summer days and the surprisingly perfect pairing of watermelon and goats cheese make it equally as delicious.

Ingredients
500 g chilled watermelon
150 g soft goats cheese
4 red radishes
2 shallots
1 cup mint
1 cup basil
1/3 cup verjuice
2 1/2 tbsp extra virgin olive oil
Method
- Thinly slice and cut watermelon into rough cubes.
- Arrange watermelon and mint on a platter and dot with small spoonful of goats cheese. Thinly shave radishes and shallots on a mandolin or carefully with a knife and scatter over the watermelon.
- For the dressing, whisk ingredients in a bowl, season to taste, then drizzle over watermelon salad and serve.
