Thyme Roasted Mushrooms
Delicious earthy mushrooms heavy with thyme, and roasted to golden perfection, the recipe for these thyme roasted mushrooms can be enjoyed alongside a variety of dishes.
Ingredients
500g organic cup mushrooms
1 tbsp butter, melted
1 ½ tbsp extra virgin olive oil
pinch of thyme leaves
sea salt and freshly ground black pepper
Method
- Preheat oven to 200 degrees.
- Place the mushrooms, gills up on a large baking tray.
- Brush with butter and drizzle with olive oil.
- Scatter with thyme leaves and season with freshly sea salt and freshly ground black pepper.
- Roast in oven for approximately 15 minutes, or until just tender.
- Serving suggestion: Poached eggs with a simple green salad and a fresh citrusy dressing.
