THE ULTIMATE BAKED ZUCCHINI

Now this zucchini dish is viral for a reason. It’s so easy to make, tastes ridiculously good and can be bammed up any old way you feel!

Ingredients:

  • 2 Zucchinis
  • Salt
  • Olive Oil
  • Tomatoes
  • Garlic
  • Herbs

Method: 

  1.  Halve the zucchini lengthwise and score the flesh in a crosshatch pattern so that the salt can penetrate it.
  2. Rub salt on to the scored side of the zucchini. Leave the zucchini for around 20 minutes so that salt has time to draw out moisture, which will help maintain the density of the vegetable as it cooks.
  3. Dry the zucchini off.
  4. Heat olive oil in a fry pan and add the zucchini flesh side down for around 5 minutes on high heat.
  5. Add tomatoes, garlic, herbs and a bit more olive oil.
  6. Bake for around 15 minutes.
  7. Transfer zucchini to a paper towel to blot excess oil.
  8. Arrange the zucchini on a serving platter, and spoon on your choice of sauce (we used a loaded, herby yoghurt) and toppings.
