Sweet Potato Hummus

Try this gorgeous recipe by EatByDesign – perfect for a midday snack!

Ingredients: 

  • 2 medium sweet potatoes, cut
  • into cubes
  • 1 x 400g chickpeas, drained
  • & rinsed
  • 6 tbsp olive oil
  • 2 tbl hulled tahini
  • 1 heaped tsp of brown miso paste
  • Juice of 1 lemon
  • Pinch sea salt
  • 2-4 tbsp water

Method

  1. Boil potatoes in a saucepan until tender, then rinse and allow to cool slightly.
  2. Place all remaining ingredients (except the water) into a food processor and process until combined. Gradually add in the water until a hummus consistency is achieved.
  3. Serve with veggie sticks, crackers, or even as a high-protein salad topper.
