SUMMER SURPRISE APPLE JAM
Ingredients:
- 350 grams Summer Surprise apple
- 200 grams Leaf raw sugar
- 2 tbsp lemon juice
- 75 grams dried currants
- 75 grams roasted pecans
- 1 cinnamon stick
- 125ml water
- a pinch of salt
Method:
- Peel, core, and roughly chop your apples into small pieces.
- Add chopped apples with the water in a pot over medium-high heat. Bring to a simmer, stirring occasionally, and cook until tender.
- Reduce heat and add the sugar. Stir frequently until mixture is thick, about 15 minutes.
- Add the lemon juice, cinnamon stickand a pinch of salt. Let it simmer for 10 more minutes.
- Chop the pecans into small chunks and add to the jam once it’s cooled down along with the dried currants. Mix well.
- Store in an airtight container to be enjoyed as a spread for your bread.
