SUMMER SURPRISE APPLE JAM

Ingredients:

  • 350 grams Summer Surprise apple
  • 200 grams Leaf raw sugar
  • 2 tbsp lemon juice
  • 75 grams dried currants 
  • 75 grams roasted pecans
  • 1 cinnamon stick
  • 125ml water
  • a pinch of salt

Method: 

  1. Peel, core, and roughly chop your apples into small pieces.
  2. Add chopped apples with the water in a pot over medium-high heat. Bring to a simmer, stirring occasionally, and cook until tender.
  3. Reduce heat and add the sugar. Stir frequently until mixture is thick, about 15 minutes.
  4. Add the lemon juice, cinnamon stickand a pinch of salt. Let it simmer for 10 more minutes.
  5. Chop the pecans into small chunks and add to the jam once it’s cooled down along with the dried currants. Mix well.
  6. Store in an airtight container to be enjoyed as a spread for your bread.
