Sugar-free Pumpkin Muffins
These pumpkin muffins are made from whole and nourishing ingredients and are completely sugar-free. That makes them a great snack for anyone who needs a 3pm hit of energy.
Ingredients
1.5 cups almond meal
1/2 cup shredded coconut
3/4 cup pumpkin, pureed
3 eggs, beaten
1 tbsp baking powder
1/4 cup coconut oil
1 banana, mashed
1/4 cup rice malt syrup, or honey
2 tbsp cinnamon, ground
2 tbsp chia seeds
Method
- Preheat oven to 160 degrees.
- Line a muffin tin with muffin cases
- Place all dry ingredients into a bowl and then add wet ingredients
- Gently mix the ingredients together until just combined
- Fill the muffin cases until 3/4 full
- Place the muffin tin into the oven for about 20 minutes or until they are golden on top
- Once ready, cool on a wire rack, or enjoy fresh (and warm) straight out of the oven
