Strawberry and White Chocolate Muffins

What better combination is there than strawberries and chocolate?

Ingredients

2 tbsp lemon juice
250 ml of milk
125 ml of peanut oil
1 large Real Eggs Free Range Egg
300 g Kialla Unbleached Self Raising Flour
150 g caster sugar
170 g white chocolate chopped into small chunks
200 g Tina Berrie’s Strawberries

Method

  1. Preheat oven to 170 degrees.
  2. Line muffin pan with paper cases.
  3. Whisk lemon juice, milk, oil and egg in a medium bowl until well combined.
  4. Place self-raising flour, caster sugar and white chocolate in a large bowl. Stir to combine. Add berries.
  5. Gently stir wet ingredients into dry ingredients. Stop stirring once the ingredients are combined (do not over mix).
  6. The batter should be quite wet.
  7. Divide mixture evenly between muffin cases.
  8. Bake for 25 minutes.
  9. Serve the muffins at room temperature, dusted with icing sugar.
  10. Enjoy!
