SPAGHETTI AL LIMONE

Ingredients: 

  • 1 x 500gram packet of dried spaghetti
  • 3 lemons
  • Olive oil
  • Butter
  • Chilli
  • Optional chilli oil
  • Fresh basil

Method

  1. Salt 5 litres of water in a large pot and add the peel of 1 lemon. When the water is boiling, ad the pasta and gently cook until al dente.
  2. Meanwhile pour a glug of olive oil to a large frying pan, then add the zest and juice of 2 lemons. Gently heat and add in a sizable chunk of butter and melt into the sauce.
  3. Reserve a cup of that salted, lemony pasta water as your secret
  4. ingredient to take this dish to the next level.
  5. Add your al dente pasta water to the lemon mix in the frying pan and give it a little mix around on a medium heat. Add in most of your reserved pasta water (use your judgement on this one).
  6. Add in another sizeable chunk of butter just for good measure, give it another mix and serve.
  7. Top with some fresh chilli and/or chilli oil and some fresh basil leaves.
  8. Now devour it and save this recipe because we know it’ll be a new favourite!
