Soba Noodles with Snow Peas, Ginger & Tofu
The recipe for these Soba Noodles with tofu, ginger and snow peas is simple and healthy and is also packed full of flavour.

Ingredients
2 tbsp sesame seeds
240g Earth Source Bio Dynamic Silken Tofu, cut into 2cm squares
2 cups water
1 tsp dashi stock
1 tbsp mirin
1 tbsp- soy sauce
1 tsp sesame oil
1 tsp fresh ginger, sliced finely
1 small red chilli, seeded, sliced finely
120g snow peas
200g Soba Noodles
Method
- Toast sesame seeds in a dry frying pan, stirring constantly.
- Roll the tofu in the sesame seeds to coat and set aside.
- Heat the water in a medium saucepan, add the dashi stock and stir. Add the mirin, soy, sesame oil, ginger and half the chilli.
- Meanwhile, bring a large saucepan of salted water to the boil. Add the snow peas for 1 minute, remove with a slotted spoon and set aside. Add the soba noodles and simmer until just tender (about 5 minutes) drain.
- To serve, divide the noodles among bowls. Add the snow peas and broth, top with tofu and sprinkle over remaining chilli.
