Soba Noodle Salad with Walnut & Honey Miso Dressing
Want a simple lunch that packs a punch?
Ingredients:
- Soba noodles
- Edamame beans
- Punnet of cherry tomatoes
- Cucumber
- Chinese broccoli
- Sesame oil
- White soy sauce
- Walnut & honey miso paste (recipe here)
Method
- Cook your soba noodles and set aside to cool.
- Chop your cherry tomatoes, cucumbers and Chinese broccoli.
- Make a simple dressing of sesame oil, white soy sauce plus a generous helping of walnut & honey miso paste.
- Toss veggies and dressing through your noodles.
- Top with grilled salmon for some extra protein!
