Rhubarb Bread & Butter Pudding
Rhubarb is an unusual vegetable in the sense that it is one of few vegetables that is treated like a fruit and enjoyed predominantly in sweet dishes such as crumbles, compotes, and our favourite, bread and butter pudding.
A simple dish, prepared, cooked and enjoyed in under an hour, this tasty desert is a delicious winter warmer that will chase away the chilly night air.
Ingredients
PUDDING
4 free-range eggs
2 cups of milk
300 ml pure cream
1/4 cup caster sugar
1 tsp vanilla essence
8 thick slices bread crust removed
40 g soft butter
2 tbsp demerara sugar
RHUBARB
1 bunch rhubarb diced
1/2 cup brown sugar
Method
- Dice rhubarb and mix together with brown sugar over a medium heat.
- Whisk eggs, milk, cream, sugar, vanilla and cinnamon together.
- Preheat oven to 180 degrees. Lay bread evenly on the bottom of an oven proof pan.
- Top with rhubarb.
- Add another layer of bread (spread with butter) and pour egg mixture over. Sprinkle with Demerara sugar.
- Bake for 30 – 35 minutes and remove.
- Set aside to cool.
