Quiche Leekraine
Our produce of the week is Leek. From Deavon Meadow, our leek is extremely versatile and can be used as a supporting flavour, a side or as the star of the show.
Perfect for warming winter meals like this Quiche Leekraine, leeks are also a great source of Vitamin K.
Recipe adapted from Jamie Oliver.
Ingredients
300 g leeks diced
1 tbsp olive oil
3 slices bacon diced
75 g cheddar cheese
3 free-range eggs
250 ml of milk
1 sheet Careme Sour Cream shortcrust pastry
Method
- Preheat the oven to 180 degrees.
- Trim and finely slice the leeks, then sautée with a splash of oil until soft and sticky.
- Chop the bacon, then fry in a separate pan until golden.
- Coarsely grate the cheese.
- Whisk together the eggs, then stir through the cheese, milk, leeks, bacon and a good pinch of seasoning.
- Lay the pastry sheet in a baking tray, then lay a sheet of parchment paper and fill with blind baking beans, or rice and cook for 10 minutes.
- Pour the mixture into the case and bake for 25 to 30 minutes, or until golden.
- Serve with a mixed green salad.
