PINE MUSHROOM AND MANCHEGO MELT
Ingredients:
- Handful of pine mushrooms
- Shallots
- Butter
- Cream
- Bread for toasting
- Manchego cheese (grated)
- Fresh chives, chopped
Method:
- Melt your butter in a frying pan and add your chopped pine mushrooms and shallots.
- Once softened, add a little cream.
- Toast a slice of your favourite bread, top with the mushroom mix and heaps of grated manchego cheese.
- Pop under the grill and sprinkle with chopped chives.
