Nectarine Tarte Tatin
This easy and delicious nectarine tarte tatin truly celebrates stone fruit season with soft and tart yellow nectarines on a crispy puff pastry.

Ingredients
100 g unsalted butter
8-10 yellow nectarines halved and pitted
150 g caster sugar
1 vanilla pod split lengthways
1 sheet puff pastry
Method
- Prepare the nectarines.
- Smear an ovenproof frying pan with butter. Place the nectarine halves, cut side up, into the pan, packing them in tightly.
- Sprinkle over the sugar and the vanilla pod and cook over medium heat. Cook for 15 to 20 minutes, until they turn a lovely golden colour. When they are done, remove the vanilla pod and leave to cool.
- Preheat the oven to 200 degrees.
- Cut the puff pastry into a circle that covers the circumference of the frying pan, with a slight overlap.
- Lay the puff pastry circle into the frying pan over the nectarines, tucking the overlap down the sides of the pan. Put the frying pan onto a baking tray.
- Bake for 15 to 20 minutes, or until the pastry is golden brown and has risen. Remove from the oven and leave to cool.
- Once cooled, place a large plate over the top of the frying pan over the top of the frying pan and then quickly flip them both over so that the tarte tatin now sits on the plate and the pastry is on the bottom.
- Enjoy with a scoop of crème fraiche or double cream.
