Nectarine & Mango Crumble
Marrying two of our favourite summer fruits, this crumble recipe is the perfect crumble for the warmer weather. Simple and delicious, you can’t go wrong. The addition of raspberries can add an extra depth of flavour to this already delicious desert.

Ingredients
1 cup plain flour plus 1 1/2 tbsp
1/2 cup brown sugar
1/2 tsp ground cinnamon
pinch salt
1/2 cup rolled oats
10 tbsp unsalted butter cut into small pieces
4 white nectarines
2 ripe mangoes
1/2 cup sugar
2 tbsp fresh lime juice
Vanilla ice cream to serve
Method
- Preheat oven to 180 degrees.
- In a bowl, combine 1 cup flour, brown sugar, cinnamon, salt and oats with a hand mixer. Add butter and mix until clumps form. Transfer to a bowl, cover and refrigerate until ready to use.
- Peel and pit nectarines, and cut into chunks, place in a large bowl. Halve mangoes lengthwise, remove and discard pip and peel. Cut into chunks and add to nectarine mix.
- Add remaining 1 ½ tbsp flour, granulated sugar and lime juice and toss to combine.
- Remove from oven and leave to cool slightly.
- Serve warm with ice cream.
