Fennel, Cara Cara Orange & Mozzarella Salad
Bursting with colour and flavour, this Fennel, Cara Cara Orange & Mozzarella Salad is the perfect side for fish or chicken.
Ingredients
2tbsp fresh lemon juice
1 large fennel bulb
3 tsp extra virgin olive oil
3 tsp balsamic vinegar
160g baby rocket
3 Cara Cara Oranges, peeled, thinly sliced
2 That’s Amore Mozzarella balls, torn
Method
- Squeeze lemon juice and place in a bowl of iced water
- Using a mandolin or sharp knife, shred the fennel into thin slices.
- Dice fennel into thin strips. Add to the bowl with lemon and iced water.
- Combine oil and vinegar in a small bowl.
- Remove the skin of the oranges with a knife and gently cut out the segments. Place rocket and organic in a large serving bowl and scatter mozzarella.
- Drain fennel mixture.
- Add fennel to the salad and drizzle with dressing.
- Season with salt and pepper to taste and toss to combine.
