Fattoush Salad
Fattoush salad is a traditional Lebanese salad made with vegetables and crispy pita bread. Our recipe for Fattoush salad uses our seasonal Iceberg Lettuce from Somerville on the Mornington Peninsula.
Ingredients
SALAD
1 pita bread
olive oil for brushing
1 lebanese cucumber diced
3/4 cup tomato diced
3/4 cup iceberg lettuce torn into pieces
1/2 capsicum diced
1/4 cup parsley finely chopped
1/4 cup spring onions finely chopped
1/4 cup mint leaves finely chopped
DRESSING
2 tbsp olive oil
2 tbsp lemon juice
1 tbsp garlic minced
Salt to taste
Method
- Place pita bread on a clean, dry surface and brush it with olive oil on both sides.
- Heat a non stick pan and cook pita bread on medium heat for 2-3 minutes or until crisp and golden on both sides. Tear the toasted pita bread.
- Combine all the salad ingredients, together in a bowl. Top with torn pita bread pieces.
- Meanwhile prepare the dressing by combining ingredients in a small bowl.
- Drizzle dressing over the salad and serve.
