Easy Fried Rice
An all round favourite, this fried rice is so easy to whip up last minute on a weeknight. With ingredients found in your pantry, you can take it to the next level by adding a few extra ingredients such as chicken, or prawns!
Also perfect for school lunches the next day as it tastes just as delicious when cool.

Ingredients
2 cups Demeter Bio Dynamic White Rice
2 rashers Greenvale Bacon finely diced
2 shallots finely diced
1/3 cup corn kernels fresh, frozen or tinned
1/3 cup peas fresh or frozen
1 carrot finely diced
2 tbsp Spiral Soy Sauce
2 eggs lightly beaten
Method
- Prepare all ingredients before starting to cook. Cook rice according to packet instructions.
- Heat oil in a frying pan until sizzling hot. Add bacon, shallots, corn, peas and carrots until lightly cooked.
- Add rice. Cook for about 5 minutes, stirring only once a minute.
- Add soy sauce, and stir for another 2 minutes.
- Move ingredients over to one side and leave some space in the pan. Pour in the egg and let cook for 30 seconds. With fork, scramble and then combine with the rest of the rice.
- Serve and enjoy!
