DELICIOUS HOMEMADE FOCACCIA
Dough Ingredients:
- 500 grams (3 ⅓ cups) Leaf plain flour
- 2 teaspoons instant yeast
- 2 teaspoons sugar
- 1 teaspoon salt
- 375 ml (1 ½ cups) warm water
- 3 tablespoons Mount Zero olive oil
Other Ingredients:
- 100 grams pitted olives, sliced
- 150 grams feta cheese, crumbled
- 1 small red onion, thinly sliced
- 1 large tomato, sliced
- Fresh rosemary sprigs
- Mount Zero olive oil
- Sea salt, for sprinkling
Method:
1.In a large mixing bowl, combine the flour, instant yeast, sugar, and salt.
2.Make a well in the centre of the dry ingredients and pour in the warm water and olive oil. Mix well until a sticky dough forms.
3.Transfer the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
4.Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
5.Preheat your oven to 200°C.
6.Punch down the risen dough and transfer it to a greased baking sheet. Gently press and stretch the dough to fill the baking sheet evenly.
7.Scatter the sliced olives, crumbled feta cheese, red onion slices, tomato slices, and rosemary sprigs over the dough. Drizzle generously with Mount Zero olive oil and sprinkle with sea salt.
8.Let the topped focaccia rest for another 15-20 minutes.
9.Bake in the preheated oven for 20-25 minutes or until the bread is golden brown and the toppings are slightly caramelised.
10.Remove from the oven and let it cool slightly before cutting into squares or wedges.
