CHOCOLATE COCONUT SLICE
This sweet treat is sure to be a hit in your household! This week’s recipe from our friends at EatByDesign is a delicious Chocolate Coconut Slice – yum!
Ingredients:
- 3/4 cup melted coconut oil
- 1/4 cup raw honey
- 1/4 cup raw cacao powder
- 1 cup rolled oats
- 3/4 cup gluten-free plain flour
- 1/2 cup almond meal or seed meal for nut-free
- 1 cup fine coconut
- 1 tsp cinnamon
- Pinch sea salt
For the icing:
- 100 g dark chocolate
- 30 ml milk of choice
- 1 tbsp coconut oil
- 1⁄2 tbsp honey
- Pinch salt
Method
- Preheat oven to 180°C and line a lamington tin with baking paper.
- Melt the coconut oil in a saucepan, then add in the honey, mixing well until dissolved. Add the cacao, flour, meal, oats, coconut, cinnamon and salt.
- Press firmly into the lined tin and bake for 15 minutes. Allow the slice to cool in the tin.
- Make the icing by combining all ingredients in a saucepan and melt. Stir continuously with a whisk. Once all ingredients are mixed together, all to cool for 10 minutes then ice the slice.
- Place the slice in the fridge for the icing to set, then cut into pieces.
