Brocballs with Garlic Tomato Sauce

So versatile Broccoli can be enjoyed in many forms, on it’s own, as a side, or as star of the show in our brocballs with garlic tomato sauce.

Perfect for vegetarians, as well as meat lovers, our brocballs with garlic tomato sauce are easy and delicious and are the perfect way to get the kids to love eating their greens.

Ingredients

BROCBALLS

2 heads Broccoli
1 cup almond meal
1/2 cup grated cheese
1/4 cup Parmesan cheese
1/4 cup fresh basil finely chopped
1/4 cup fresh parsley finely chopped
2 cloves garlic minced
1/8 tsp cayenne pepper (optional)
2 large free range eggs

GARLIC TOMATO SAUCE

1 tbsp olive oil
1/4 cup brown onion diced
1 large garlic clove finely chopped
1 400g can crushed tomatoes

Method

  1. Preheat oven to 180 degrees and line baking sheet with parchment paper.
  2. Steam broccoli florets for ten minutes, until tender and bright green, leave to cool.
  3. Pulse steamed broccoli in food processor until chopped, add to bowl with almond meal. Add parmesan, grated cheese, basil, parsley and garlic. If desired, add cayenne pepper and salt and pepper to season.
  4. Whisks eggs in a small bowl and stir into broccoli mixture.
  5. Shape mixture into 12 balls, pressing firmly. Place on baking sheet and bake for 25 minutes.
  6. Heat oil in a large saucepan over medium heat and add onion and garlic, cook for 5 minutes. Add tomatoes and cook until sauce thickens, stirring occasionally.
  7. Serve balls and drizzle with sauce and enjoy!
