Broad Beans and Peas with Mint Butter

A deliciously summer side dish, perfect for any occasion.
Recipe adapted from BBC Good Food.

Ingredients

700g podded broad beans
500g podded fresh peas
50g butter
1 bunch spring onions, chopped
4 tbsp chicken stock or water
handful mint leaves

Method

  1. Heat half the butter and fry onions until soft, Add beans and stir.
  2. Add stock or water, bring to the boil and cook for 5 minutes.
  3. Add peas and seasoning and cook for 5 minutes, until tender.
  4. Stir in mint and remaining butter.
  5. Serve alongside you’re favourite dish.
  6. Enjoy!
