BRAISED BEEF WITH RED WINE

Ingredients:

  • 2 pounds beef, trimmed and cut into 2-inch pieces⁠
  • 1 teaspoon salt⁠
  • 1/2 teaspoon black pepper⁠
  • 2 tablespoons olive oil⁠
  • 1 large onion, diced⁠
  • 4 garlic cloves, minced⁠
  • 1 red bell pepper, diced⁠
  • 2 cups beef broth⁠
  • 1 cup red wine ⁠
  • 2 tablespoons tomato paste⁠
  • 1 tablespoon brown sugar⁠
  • 1 tablespoon smoked paprika⁠
  • 1/2 teaspoon dried thyme⁠
  • 1/2 teaspoon dried oregano⁠
  • 1 bay leaf⁠
  • Chopped fresh parsley, for serving⁠

Method: 

1. Preheat your oven to 175°C.⁠
2. Season the beef with salt and black pepper.⁠
3. Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Add the beef and cook for 5-6 minutes, until browned on all sides. Remove the beef from the pot and set aside.⁠
4. Add the onion, garlic, and red bell pepper to the pot and sauté for 3-4 minutes, until the vegetables are softened.⁠
5. Add the beef broth, red wine, tomato paste, brown sugar, smoked paprika, dried thyme, dried oregano, and bay leaf. Stir to combine.⁠
6. Return the beef to the pot and bring the mixture to a simmer.⁠
7. Cover the pot with a lid and transfer it to the oven. Cook for 3-4 hours, until the beef is tender and falls apart easily.⁠
8. Remove the pot from the oven and discard the bay leaf.⁠
9. Serve the beef hot, garnished with chopped fresh parsley.
