BEEF STIRFRY WITH ASPARAGUS AND SESAME SEEDS
A new month calls for a new recipe! This Beef Stir Fry with Asparagus and Sesame Seeds from EatByDesign is perfect for a nourishing and filling lunch or dinner this week.
Ingredients:
- 1/2 cups coriander, roughly chopped
- 1 tbsp white sesame seeds
- 2 tsp sesame oil
- 200g snow peas, fresh or frozen, raw
- 300g asparagus, green, raw, cut into 3cm pieces
- 2 tbsp olive oil
- 400g black beans; dried, boiled, microwaved or steamed if
- fresh, or drained if tinned
- 2 red chillies, raw, deseeded and finely chopped
- 2 garlic cloves, crushed
- 4cm ginger, finely grated
- 4 tbsp tamari
- 2 tbsp mirin
- 500g beef fillet steak, untrimmed, raw, thinly sliced
- 4 cups cauliflower, riced & cooked/steamed
Method
- Mix together the mirin, 1 tablespoon of tamari, ginger, garlic and chilli in a bowl and marinate the beef fillet for 30 minutes (if time permits).
- In a separate bowl, marinate the black beans in 1 tablespoon of tamari.
- Place a wok over high heat, add the oil then the beef mixture. Stir-fry for about 2 minutes, or until the meat is browned all over.
- Add the asparagus, snow peas, black beans and sesame oil and reduce the heat.
- Stir in 4 tablespoons of hot water and the remaining tamari and stir-fry gently for a few more minutes until the vegetables are tender.
- Season with pepper and sprinkle over the sesame seeds and coriander.
- Serve with cauliflower rice.
