Bacon and Maple Drizzled Pancakes

Ingredients
1 cup Kialla Organic Plain Flour
- 100g bacon
- 1 tsp baking powder
- 2/3 cup milk
- 1 egg, beaten
- 1 tbsp sunflower oil
- 20g butter
- 80ml Noble Maple Syrup
Method
- Preheat the oven to 200 degrees. Put the bacon onto a baking tray and cook in the oven for 15 – 20 minutes, until crisp.
- Meanwhile, sift the flour and baking powder into a bowl. Whisk the milk and egg together in a bowl. Whisk the milk and egg together in a jug until smooth. Make a well in the middle of the flour, then gradually beat in the egg and milk mixture with a wooden spoon. When the bacon’s nearly ready, heat the pan and cook pancakes for a minute each side.
- Serve the pancakes with bacon, a little butter and drizzle with maple syrup.
