Avocado & Goats Cheese Smash
The only thing better than a good old smashed avo, is having it delivered to you in bed on a Sunday morning.
Whip up a homemade brekky in bed with this simple and tasty recipe for smashed avo with goats cheese atop Elwood Sourdough.
Ingredients
2 small, firm, ripe avocadoes stone removed, peeled
80 g Meredith Dairy Goats Cheese crumbled
2 tbsp fresh mint chopped, plus extra to garnish
1 squeeze lemon juice
4 large slices Elwood Sourdough
salt
freshly ground black pepper
Method
- Place the avocado in a medium sized bowl and mash roughly with a fork. Add mint and a large squeeze of lemon juice, mash until combined. Season to taste with salt and pepper.
- Toast or grill bread until golden. To serve, spoon ¼ of the avocado mixture onto each slice of bread.
- Top with Meredith Dairy Goats Cheese.
- Serve immediately and top with mint.
