ALMOND BUTTER STIRFRY

Looking for an easy, healthy mid-week meal idea? This Almond Butter Stir Fry from the team at EatByDesign is the perfect option!

Ingredients: 

  • 2 tbsp olive oil
  • 4 garlic cloves, crushed
  • 2 chillis, red, raw, finely chopped
  • 600g beef fillet steak – separable lean, raw strips
  • 1 head broccoli, chopped
  • 2 cups cauliflower, chopped
  • 2 cups red cabbage, finely shredded
  • 4 tbsp almonds
  • Sea salt, to taste
  • Pepper, to taste

For the sauce:

  • 1⁄2 cup almond butter
  • 4 tbsp tamari
  • 2 tsp apple cider vinegar
  • 1 lemon, juiced

Method

  1. To make the sauce, place all sauce ingredients in a small bowl with 1/3 cup of water and mix until well combined.
  2. Place a frying pan over medium heat, add the olive oil and cook the garlic and chilli for 2 minutes. Add the beef strips and cook for a further 5 minutes. Add the broccoli, cauliflower and cabbage and cook, covered, for 5 – 7 minutes, or until the veggies begin to soften. Mix in the sauce and cook for a further 5 minutes.
  3. Serve into bowls and enjoy.
