Tony Dench, a baker, and his father John, a chef, actually knew a thing or two about creating a fantastic food business before they started their bakery in Fitzroy North.
For years son Tony and his father John helped, separately, other people develop hugely successful bakeries and eateries. “One day we just thought let’s join forces and do this for ourselves,” says Tony. So, in 2005 Dench Bakers, complete with café, was born. Their organic produce now includes a full range of artisan breads as well as exceedingly good pastries which, in the spirit of a true family business, are baked by Tony’s pastry chef wife Odette Martini (Karen Martini’s younger sister) and taken to market by his pastry hand mother-in-law.
