Carrot & Ginger Soup

A warming and hearty recipe, this carrot and ginger soup is full of nourishing goodness, and tastes delicious as well.

Method

  1. In a pot over medium heat, cook shallots, ginger and coconut oil until fragrant, approximately 2 minutes.
  2. Add carrots, sweet potato, water and salt.
  3. Simmer, covered until vegetables are tender, 10 minutes.
  4. Puree in a blender until smooth.
  5. Season with salt; serve hot or cold with yoghurt.
  6. Enjoy!
