Carrot & Ginger Soup
A warming and hearty recipe, this carrot and ginger soup is full of nourishing goodness, and tastes delicious as well.

Ingredients
- 1/4 cup shallots minced
- 4 tsp ginger minced
- 2 tbsp coconut oil
- 500 g carrots peeled and chopped
- 1 sweet potato peeled and chopped
- 4 cups water
- salt
- Greek Style yoghurt to serve
Method
- In a pot over medium heat, cook shallots, ginger and coconut oil until fragrant, approximately 2 minutes.
- Add carrots, sweet potato, water and salt.
- Simmer, covered until vegetables are tender, 10 minutes.
- Puree in a blender until smooth.
- Season with salt; serve hot or cold with yoghurt.
- Enjoy!
