Thyme Roasted Mushrooms
Delicious earthy mushrooms heavy with thyme, and roasted to golden perfection, the recipe for these thyme roasted mushrooms can be enjoyed alongside a variety of dishes.
Ingredients
- 500g organic cup mushrooms
- 1 tbsp butter, melted
- 1 ½ tbsp extra virgin olive oil
- pinch of thyme leaves
- sea salt and freshly ground black pepper
Method

Preheat oven to 200 degrees.

Place the mushrooms, gills up on a large baking tray.

Brush with butter and drizzle with olive oil.

Scatter with thyme leaves and season with freshly sea salt and freshly ground black pepper.

Roast in oven for approximately 15 minutes, or until just tender.

Serving suggestion: Poached eggs with a simple green salad and a fresh citrusy dressing.
