Soba Noodles with Snow Peas, Ginger & Tofu 

The recipe for these Soba Noodles with tofu, ginger and snow peas is simple and healthy and is also packed full of flavour.

Ingredients 

  • 2 tbsp sesame seeds
  • 240g Earth Source Bio Dynamic Silken Tofu, cut into 2cm squares
  • 2 cups water
  • 1 tsp dashi stock
  • 1 tbsp mirin
  • 1 tbsp- soy sauce
  • 1 tsp sesame oil
  • 1 tsp fresh ginger, sliced finely
  • 1 small red chilli, seeded, sliced finely
  • 120g snow peas
  • 200g Soba Noodles

Method 

  1. Toast sesame seeds in a dry frying pan, stirring constantly.
  2. Roll the tofu in the sesame seeds to coat and set aside.
  3. Heat the water in a medium saucepan, add the dashi stock and stir. Add the mirin, soy, sesame oil, ginger and half the chilli.
  4. Meanwhile, bring a large saucepan of salted water to the boil. Add the snow peas for 1 minute, remove with a slotted spoon and set aside. Add the soba noodles and simmer until just tender (about 5 minutes) drain.
  5. To serve, divide the noodles among bowls. Add the snow peas and broth, top with tofu and sprinkle over remaining chilli.
