DELICIOUS HOMEMADE FOCACCIA

Dough Ingredients:

  • 500 grams (3 ⅓ cups) Leaf plain flour⁠
  • 2 teaspoons instant yeast⁠
  • 2 teaspoons sugar⁠
  • 1 teaspoon salt⁠
  • 375 ml (1 ½ cups) warm water⁠
  • 3 tablespoons Mount Zero olive oil⁠

Other Ingredients:

  • 100 grams pitted olives, sliced⁠
  • 150 grams feta cheese, crumbled⁠
  • 1 small red onion, thinly sliced⁠
  • 1 large tomato, sliced⁠
  • Fresh rosemary sprigs⁠
  • Mount Zero olive oil⁠
  • Sea salt, for sprinkling⁠

Method: 

1.In a large mixing bowl, combine the flour, instant yeast, sugar, and salt.⁠
2.Make a well in the centre of the dry ingredients and pour in the warm water and olive oil. Mix well until a sticky dough forms.⁠
3.Transfer the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.⁠
4.Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.⁠
5.Preheat your oven to 200°C.⁠
6.Punch down the risen dough and transfer it to a greased baking sheet. Gently press and stretch the dough to fill the baking sheet evenly.⁠
7.Scatter the sliced olives, crumbled feta cheese, red onion slices, tomato slices, and rosemary sprigs over the dough. Drizzle generously with Mount Zero olive oil and sprinkle with sea salt.⁠
8.Let the topped focaccia rest for another 15-20 minutes.⁠
9.Bake in the preheated oven for 20-25 minutes or until the bread is golden brown and the toppings are slightly caramelised.⁠
10.Remove from the oven and let it cool slightly before cutting into squares or wedges.
