BRAISED BEEF WITH RED WINE
Ingredients:
- 2 pounds beef, trimmed and cut into 2-inch pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 tablespoon brown sugar
- 1 tablespoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 bay leaf
- Chopped fresh parsley, for serving
Method:
1. Preheat your oven to 175°C.
2. Season the beef with salt and black pepper.
3. Heat the olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Add the beef and cook for 5-6 minutes, until browned on all sides. Remove the beef from the pot and set aside.
4. Add the onion, garlic, and red bell pepper to the pot and sauté for 3-4 minutes, until the vegetables are softened.
5. Add the beef broth, red wine, tomato paste, brown sugar, smoked paprika, dried thyme, dried oregano, and bay leaf. Stir to combine.
6. Return the beef to the pot and bring the mixture to a simmer.
7. Cover the pot with a lid and transfer it to the oven. Cook for 3-4 hours, until the beef is tender and falls apart easily.
8. Remove the pot from the oven and discard the bay leaf.
9. Serve the beef hot, garnished with chopped fresh parsley.
