PINE MUSHROOM AND MANCHEGO MELT

Ingredients:

  • Handful of pine mushrooms
  • Shallots
  • Butter
  • Cream
  • Bread for toasting
  • Manchego cheese (grated)
  • Fresh chives, chopped

Method: 

  1. Melt your butter in a frying pan and add your chopped pine mushrooms and shallots.
  2. Once softened, add a little cream.
  3. Toast a slice of your favourite bread, top with the mushroom mix and heaps of grated manchego cheese.
  4. Pop under the grill and sprinkle with chopped chives.
