DARK SALTED CARAMEL SAUCE

Ingredients:

  • 300g Leaf white sugar⁠
  • 120ml cold water⁠
  • 75g unsalted butter⁠
  • 125ml heavy cream⁠
  • 1 tsp sea salt flakes⁠

Method: 

  1. Place the sugar and water in a heavy bottom pot or saucepan over medium heat until the sugar melts and turns slightly dark golden brown. Stir and swirl occasionally.⁠
  2. Add unsalted butter and whisk until it’s combined.⁠
  3. Remove from heat and slowly pour in the heavy cream, whisking continuously until fully combined.⁠
  4. Return the saucepan to heat. Add the salt and whisk for 30 seconds.⁠
  5. Remove from heat and let it cool for about 15 minutes.⁠
  6. Transfer the caramel sauce to a glass jar or bowl for storage.⁠
  7. Use to drizzle on any dessert or to make your own caramel macchiato at home.
