CREAMY PESTO GNOCCHI SARDI

Inspired by the incredible fresh basil and delicata squash from Ramarro Farm, this creamy pasta dish is one to try!

Ingredients:

  • 1 packet of gnocchi sardi
  • 2 delicata or 1 regular squash
  • 2 handfuls of rocket
  • 1 bunch of basil leaves
  • 1 cup of pistachios
  • 1/2 cup of grated parmesan cheese
  • Cream
  • Garlic
  • Onion
  • Olive oil

Method: 

1. Roast your squash with olive oil and halved garlic bulbs, until golden and cooked through.

2. Meanwhile, make a simple pesto by combining a handful of basil, rocket and pistachios. Add in salt, olive oil and parmesan cheese and combine until you’ve created a thick paste.

3. Fry off a chopped onion in some olive oil, adding the bulbs of the roasted garlic from your squash and one vegetable stock cube.

4. Par-boil the pasta and then add to your frying pan. Cook it a little like you would risotto adding a cup or two of pasta water as you go.

5. Add in your squash, 2 tablespoons of cream and some grated parmesan. Turn off the heat and mix in the pesto.

6. Serve with some additional chopped pistachios and some grated parmesan.
