WHOLE LEG OF HAM IN A HOMEMADE SPICED BLACKBERRY GLAZE

Ingredients:
- 1 whole leg of Andrew’s ham
- 1 jar of Dalhousie Organic Blackberry Jam
- 2 Herbie’s Star Anise
- 1 Herbie’s Cinnamon Stick
- Juice of 2 oranges
- 1 tsp grated ginger
- 1 handful of fresh blackberries
- 1 tbsp honey
- Herbie’s cloves for decorating
Method
Creating the glaze:
- Add all ingredients to a saucepan and gently simmer for 10 minutes until slightly thickened. If the mixture gets too thick and jammy, add a splash of water.
- Set aside and prepare your ham.
Prepare your ham:
- Gently cut a line around the knuckle of the ham. Then create a single long line from the knuckle to the end of the ham. Carefully use your hands and knife to remove the skin from the leg of ham.
- Try and hand an even layer of fat remaining on the ham.
- Now score the fat to create a criss cross pattern with your knife, trying to ensure you only cut through the remaining fat and not too far into the meat. The lines should be 3cm apart. You should be left with a repeating diamond pattern.
- Then add cloves to the cross points where you’ve scored the ham. Put above half of your glaze on the ham and place in a preheated oven on around 180degrees for 30 minutes
- Top with the rest of the glaze and place back in the over for another 30 minutes.
- Remove from the oven and rest for 30 minutes. If you plan on serving it cold, be sure to get it in the fridge within an hour of taking out of the oven.
