SMASHED ZUCCHINI & GRILLED ARTICHOKE
Ingredients:
- Purple artichokes
- Zucchinis
- Olive oil
- Salt
- Greek yoghurt
- Sumac
Method
- Remove most of the outer leaves from the artichoke, trim the stalk until the harder outer bit is removed, and then chop the top off. Slice it in half and remove the fuzzy bit inside .
- Halve the zucchini and slather both veggies with olive oil and cook on a hot grill or frying pan.
- Grill until they have some good-looking caramelization and remove from the heat.
