CHOCOLATE COCONUT SLICE

This sweet treat is sure to be a hit in your household! This week’s recipe from our friends at EatByDesign is a delicious Chocolate Coconut Slice – yum!

Ingredients: 

  • 3/4 cup melted coconut oil
  • 1/4 cup raw honey
  • 1/4 cup raw cacao powder
  • 1 cup rolled oats
  • 3/4 cup gluten-free plain flour
  • 1/2 cup almond meal or seed meal for nut-free
  • 1 cup fine coconut
  • 1 tsp cinnamon
  • Pinch sea salt

For the icing:

  • 100 g dark chocolate
  • 30 ml milk of choice
  • 1 tbsp coconut oil
  • 1⁄2 tbsp honey
  • Pinch salt

Method

  1. Preheat oven to 180°C and line a lamington tin with baking paper.
  2. Melt the coconut oil in a saucepan, then add in the honey, mixing well until dissolved. Add the cacao, flour, meal, oats, coconut, cinnamon and salt.
  3. Press firmly into the lined tin and bake for 15 minutes. Allow the slice to cool in the tin.
  4. Make the icing by combining all ingredients in a saucepan and melt. Stir continuously with a whisk. Once all ingredients are mixed together, all to cool for 10 minutes then ice the slice.
  5. Place the slice in the fridge for the icing to set, then cut into pieces.
