ALMOND BUTTER STIRFRY

Ingredients:
- 2 tbsp olive oil
- 4 garlic cloves, crushed
- 2 chillis, red, raw, finely chopped
- 600g beef fillet steak – separable lean, raw strips
- 1 head broccoli, chopped
- 2 cups cauliflower, chopped
- 2 cups red cabbage, finely shredded
- 4 tbsp almonds
- Sea salt, to taste
- Pepper, to taste
For the sauce:
- 1⁄2 cup almond butter
- 4 tbsp tamari
- 2 tsp apple cider vinegar
- 1 lemon, juiced
Method
- To make the sauce, place all sauce ingredients in a small bowl with 1/3 cup of water and mix until well combined.
- Place a frying pan over medium heat, add the olive oil and cook the garlic and chilli for 2 minutes. Add the beef strips and cook for a further 5 minutes. Add the broccoli, cauliflower and cabbage and cook, covered, for 5 – 7 minutes, or until the veggies begin to soften. Mix in the sauce and cook for a further 5 minutes.
- Serve into bowls and enjoy.
