Sweet Potato Hummus
Try this gorgeous recipe by EatByDesign – perfect for a midday snack!
Ingredients:
- 2 medium sweet potatoes, cut
- into cubes
- 1 x 400g chickpeas, drained
- & rinsed
- 6 tbsp olive oil
- 2 tbl hulled tahini
- 1 heaped tsp of brown miso paste
- Juice of 1 lemon
- Pinch sea salt
- 2-4 tbsp water
Method
- Boil potatoes in a saucepan until tender, then rinse and allow to cool slightly.
- Place all remaining ingredients (except the water) into a food processor and process until combined. Gradually add in the water until a hummus consistency is achieved.
- Serve with veggie sticks, crackers, or even as a high-protein salad topper.
