Soba Noodle Salad with Walnut & Honey Miso Dressing

Want a simple lunch that packs a punch?

Ingredients: 

  • Soba noodles
  • Edamame beans
  • Punnet of cherry tomatoes
  • Cucumber
  • Chinese broccoli
  • Sesame oil
  • White soy sauce
  • Walnut & honey miso paste (recipe here)

Method

  1. Cook your soba noodles and set aside to cool.
  2. Chop your cherry tomatoes, cucumbers and Chinese broccoli.
  3. Make a simple dressing of sesame oil, white soy sauce plus a generous helping of walnut & honey miso paste.
  4. Toss veggies and dressing through your noodles.
  5. Top with grilled salmon for some extra protein!
