Porridge Bread

This tasty bread makes the best morning or mid afternoon snack – enjoy with a cup of tea!

Ingredients: 

  • 500ml tub of natural yoghurt
  • 2 tubs of Oats
  • 2 eggs
  • 1 tub of mixed dried fruit, nuts and seeds
  • Handful of shredded coconut
  • Orange zest
  • Vanilla bean extract
  • 1tsp bi-carb soda
  • Butter

NOTE: measurements are very relaxed and based on using your yoghurt tub to measure out ingredients. We encourage you to mix and match nuts, seeds and dried fruit.

Method

  1. Grab a 500ml tub of natural yoghurt and tip it into a bowl.
  2. Then fill the same tub up twice with oats and pour into a bowl with the yoghurt.
  3. Add a tub of mixed dried fruit, nuts & seeds.
  4. Add a handful of leaf shredded coconut and the zest of an orange. Add a teaspoon of vanilla bean extract and a teaspoon of bi-carb.
  5. Crack 2 eggs in the bowl with a glug of milk.
  6. Mix it all together (way easier with your hands!).
  7. Pop into 2 lined loaf pans and bake in 180 for around 40 minutes.
  8. Serve with butter or some ricotta and devour!
