Porridge Bread
This tasty bread makes the best morning or mid afternoon snack – enjoy with a cup of tea!

Ingredients:
- 500ml tub of natural yoghurt
- 2 tubs of Oats
- 2 eggs
- 1 tub of mixed dried fruit, nuts and seeds
- Handful of shredded coconut
- Orange zest
- Vanilla bean extract
- 1tsp bi-carb soda
- Butter
NOTE: measurements are very relaxed and based on using your yoghurt tub to measure out ingredients. We encourage you to mix and match nuts, seeds and dried fruit.
Method
- Grab a 500ml tub of natural yoghurt and tip it into a bowl.
- Then fill the same tub up twice with oats and pour into a bowl with the yoghurt.
- Add a tub of mixed dried fruit, nuts & seeds.
- Add a handful of leaf shredded coconut and the zest of an orange. Add a teaspoon of vanilla bean extract and a teaspoon of bi-carb.
- Crack 2 eggs in the bowl with a glug of milk.
- Mix it all together (way easier with your hands!).
- Pop into 2 lined loaf pans and bake in 180 for around 40 minutes.
- Serve with butter or some ricotta and devour!
