Cauliflower Crust Pizza

Pizza night has never looked so good with this low carb, paleo friendly, totally guilt free cauliflower crust pizza.

We are celebrating the crust so have kept our toppings very basic but feel free to top this delicious base with whatever your heart desires.

Ingredients

BASE 

1 large head of cauliflower separated into florets
1  egg lightly whisked
1/3 cup grana Padano finely grated

TOPPING

1/4 cup tomato paste
1 cup Organic Dairy Farmers Mozzarella Cheese grated
1 cup medley tomatoes
fresh basil leaves

Method

  1. Heat oven to 200 degrees.
  2. Process the cauliflower in a food processor until finely chopped.
  3. Place chopped cauliflower in a microwave safe bowl. Cover and heat on high for 8-10 minutes or until very tender.
  4. Drain through a fine sieve, pressing down well with a wooden spoon to remove any excess liquid.
  5. Combine the cauliflower, egg and parmesan cheese in a bowl. Once combined, line a 30cm-round pizza tray with baking paper.
  6. Press cauliflower mixture firmly into the tray and bake for 20 minutes, or until golden.
  7. Spread the tomato paste over the base and cover with mozzarella and tomatoes, and any other toppings as you wish.
  8. Bake for 7 minutes, or until golden and sprinkle with fresh basil leaves.
  9. Enjoy!
